🐟 BIG BOY FOOD 🐟 What do you think of Baby F’s dinner? 🍴 I will admit I did this for the photo (and showed my family as I found it amusing) then the fish got cut up and I’m sure Baby F couldn’t give a monkeys about it 😂 Anyway, we brought the @ellaskitchenuk ‘cod fishies’ for him to try. They had cod and all sorts of veggies inside...he loved them! There came in handy as the meal the rest of us were having wasn’t appropriate for him (had milk in it) so switched his for the fish which just went in the oven with rest of our food so wasn’t really any extra effort ❤️ I love the fact I don’t have to blend and plan separate meals for him now (just tweaked meals). Yummy Bolognese 500g beef mince 1 onion 2 small carrots 300ml stock 1 can chopped tomatoes 1 tsp oregano 2 crushed garlic cloves Handful peas Optional: Splash of red wine vinegar Sprinkle of Demerara sugar (These really kick it up a notch but I don’t tend to add them when cooking for my toddler, I’ll add them if I’m cooking for dinner with the hubby) 1. Brown mince in a hot pan with butter 2. Toss onion with mince for a few minutes 3. + carrots 4. After 5 mins or so, pour in stock 5. Let the stock simmer & reduce 6. Then add chopped tomatoes, oregano & garlic 7. Again let the whole dish simmer and the flavours mix together for a good 20 mins 8. Add in the peas 9. Once the peas are cooked and the sauce has reduced - It’s ready 10. 😷Готовим дома! Сегодня будем готовить стручковую фасоль. Нужно: 🌶️ стручковая фасоль замороженная, 🌶️ лук репчатый, 🌶️ чеснок, 🌶️ томаты, 🌶️соль, орегано. 🍳Отвариваем в течении 10 минут в подсоленной воде фасоль. 🍳Режем лук полу кольцами (или четверть кольцами). 🍳Мелко режем чеснок. 🍳Томаты режем, как лук (я взяла мороженые черри, из просто можно раздавить). 🍳Обжариваем нарезанные лук, чеснок, добавляем фасоль, томаты, специи. 10 минут тушим. Why we love smoothies? . 💚delicious . 🍋versatile, whatever veggies and fruits you have at home or can buy these days will do 🥝packed with nutrients 🍐help complete your 5 (or 10) a day. 🥒great way to boost your energy. 🍏high fibre content . 🥒help with hydratation . 🥑easy to make and kids just love cutting and throwing veggies and fruits into the blender. 🍏 quick fix for breakfast or snacktime How to make it? . ✅Choose a liquid base (water, milk of your choice, herbal tea) . ✅Choose a few fresh veggies and one fruit (anything you like and can be juiced in a high speed blender) ✅Choose a protein (flaxseeds, chai seeds, pumpkin seeds, almonds, cashews, avocado, yoghurt, kefir, protein powder) ✅Choose healthy fats (avocado, nuts ) ✅Choose some spices &herbs to add flavour (mint, ginger, cinnamon, parsley, cinnamon) ✅Add some additional nutrient-packed ingredients (spirulina, matcha, turmeric, raw cacao) ✅Add some ice (optional) . . 💚Tip of the day: Choose one ingredient you or your kids don’t tend to eat otherwise and hide it. Stocked up on a few store cupboard items while supporting our local restaurant @rico_sabor_rochester managed to get some huge tins of tomatoes, beans, flour, oil, rice, potatoes, chicken, garlic, 30 eggs!! The bears love cooking and helping out in the kitchen so when @littlecrumbssubscriptionboxes asked if we wanted to try one of their subscription boxes we couldn’t wait to test it out. 🧑🏼‍🍳 Our box included a recipe card and everything we needed to make these yummy pizza swirls, we just added spinach and mozzarella to ours too. You also get a story card, an activity to make with instructions and a collectible character card. 🧑🏼‍🍳 The bears had lots of fun cooking together. Thursday: Veggie Packed Sausage Rolls!... ~ Yep I’ve managed to cram cauliflower, carrots and spinach into these!...and Alfie loved them! Mwa hahahaha!! 😂 ~ He ate so many - he is a cauliflower avoider! I told him what was in it and he still said he liked them! 👍🏼 ~ If you swipe 👉🏻 you can see there method - super easy and versatile too! I sometimes add grated apple into mine, grated courgette too (obvs! 🙈😂) mix it up and wrap it in some pastry and you have yourself a dinner winner! 🤗 ~ For these you’ll need • 1 sheet of puff pastry • 400g sausage meat • 1 tbsp chopped fresh sage or use dried • handful spinach - finely chopped • 1/4 head of cauliflower - finely chopped • 1 carrot - finely grated • 1 squirt of garlic purée • salt and pepper • You can add diced red onion too which I’d fry for a little first to soften! ~ If you’d like me to write the actual recipe up just let me know in the comments! ~ Hope you’ve all survived another day! Have you been doing PB & J on repeat?⁠ ⁠ Honestly, I could eat it every day. And I’m pretty sure my toddler wouldn’t complain either (or maybe he would?). While we have plenty of peanut butter at the moment, we’re going to run out of jam pretty soon at this rate. In the same boat? Here are some other easy and delicious ways to enjoy a classic PB toast or sandwich⁠ ⁠ ✅ Fruits: fresh, canned, or frozen. I like to sprinkle with some chia seeds and cinnamon⁠ ✅ Butter: Spread a generous layer of PB, butter the other side of the bread, and grill it! It’s A great way to add extra calories if your child doesn’t have much of an appetite or is underweight - for more tips, check out my blog post “how to help your underweight child”⁠ ✅ Eggs: May seem like an odd combination but it’s pretty darn good! You can cook them any way you wish. C likes his eggs scrambled so that’s what we do a lot of times. If your child doesn’t like eggs, this might be worth a try!⁠ ✅ Grated carrots: a great way to introduce raw veggies. If your child is learning to enjoy carrots or struggles with texture, start by sprinkling a small amount on 1/2 of the bread. That way it won’t overwhelm them and they can still eat the other side if they choose not to give it a try. Don’t be disheartened though. Just seeing counts as exposure and makes the food in question less scary 💥⁠ ✅ Exposure: serve a small amount of the food your child is learning to enjoy on the side. Just serving one piece may seem silly but make no mistake. Its presence on the plate is powerful! Fun fact: Dipping into almond butter is what helped C learn to enjoy his broccoli 🤷🏻‍♀️⁠ ⁠ ❓What are some of your fav ways to enjoy a good ole PB toast/sandwich? 🍅Het restje ketchup . en sausje van zongedroogde tomaten heb ik vanavond in een lekkere tomatensaus omgetoverd. Met nog een glas tomaten Passata , oregano, ui, knoflook, parmezaan en olijven was het avondeten weer klaar. 💶 P.S. In 2 weken tijd 2x boodschappen gedaan. 60 Euro kwijt. Ik hoop dat wij het nog langer kunnen volhouden om van de voorraad te leven. . 🍅Tonight I transformed . the leftover ketchup and sauce of sun-dried tomatoes into a tasty tomato sauce. Dinner was ready with another glass of tomato Passata, oregano, onion, garlic, parmesan and olives. 💵 P.S. 2x groceries in 2 weeks. Spent 60 euros. 🍅CHORIZO & TOMATO RISOTTO🍅 Another one pot dish that’s perfect to feed the whole family ! This dish does take around 60 minutes to cook but wow it’s 100% worth it. The flavours are incredible, if you are feeding children under 4 years I would recommend chopping the chorizo into small tiny pieces as otherwise it can be a choking hazard. INGREDIENTS X1 brown onion X2 garlic cloves 250g chorizo sausage( can substitute for chicken instead) X1 low salt chicken stock cube X1 can 400g chopped tomatoes Approx 160g arborio rice 10g fresh basil 40g cheddar cheese 15ml red wine vinegar ( for added veg option grate half a carrot and half a courgette.. squeeze the water out of the courgette) X1 cup frozen peas METHOD 1. Peel and dice the onion 2. Mince the garlic 3. Heat a pan with a drizzle of oil, once hot add the onion and garlic and cook for 3 minutes until softened. 4. Add your arborio rice and stir to coat the grains in the oil. 5. Add your can of chopped tomatoes and continue on a medium heat until the tomato juice has been absorbed by the rice ( if your using hidden veg at this point add this to the dish). 6. Boil a kettle and dissolve your chicken stock cube in 400ml water ( you may need to add more water throughout cooking this dish) 7. Add your chicken stock ladle by ladle and keep stiring until all the stock has absorbed and the rice is cooked through. 8. Heat a separate pan and gently fry your chicken / chorizo. 9. Add your cooked chorizo / chicken to the dish and season with pepper. 10. Once the risotto is nearly cooked add your red wine vinegar, your frozen peas with a tsp sugar and cooker for a further 3 minutes. 11. Add a handful for cheddar cheese and allow it to melt whilst continuing to stir. (If at any point throughout your risotto is sticking or feels dry add a slight bit more hot water) 12. Creamy broccoli pasta 🥦🥦🥦 . One of our favourite easy lunches is broccoli and pasta. Either, with pesto and sometimes poached chicken, or like here with a creamy broccoli sauce. I throw some florets in with the pasta for the last couple of minutes. I always use a broth, either bone or veggie, instead of plain water, for added nutrients and taste. When it's vegetarian, I like to use red lentil pasta for added protein. 🥦 Another recipe inspired by #littlegreenkitchen: Cook 250g red lentil pasta in broth according to packet instructions. In the last 2mins trow in a cup of cleaned and trimmed broccoli florets. Meanwhile sauté 2 cups of cleaned and roughly chopped broccoli with 2 chopped garlic cloves. Add a handful of spinach and a cup of stock, season, bring to boil, reduce heat to minimum, add 1cup crème fraîche (I sometimes use oatly) and some lemon zest, simmer for 5mins. Mix with a handheld blender, mix over cooked pasta. Schnitzel with chips and Cajun slaw! To convince my youngest it was the worlds largest chicken nugget! Totally clean plates from everyone! The chicken, bash it as flat as you can with a rolling pin. In three bowls add plain flour in the first, two cracked eggs whisked, and the third breadcrumbs. Shallow fry and then pop on a baking tray pop in the oven at 180. 🌻 TODAYS ACTIVITY TIN CAN EASTER BUNNY & CHICKEN All you need: ➡️Tin cans from canned foods, remove label and wash out ➡️Scissors ➡️Glue, pritt or cello tape ➡️2 x White drawing paper, divided in half - one half will be used for the bunny, the other half for the chicken ➡️1 x yellow tissue paper or coloured paper, or yellow serviettes ➡️Crayons, koki pens, pastels or water paint 🐰Bunny: Draw the ears, eyes, paws and features on 1 half of white paper. Let your child colour them in Then parent cuts out the ears etc 🐥Chicken: Draw the eyes, feet, crest and wings on one half of white paper Let child colour them in. Parent to cut out eyes, feet etc. 👧While child is colouring in, mum or dad, must prepare the tin can. For bunny: cover the can with white paper, and stick it in place. Do the same for the chicken using the yellow paper. 📌Keep a few centimetres extra hanging over the top. See picture demo. Fold this into the can and secure with cellotape. This is to prevent little hands from being cut with any sharp pieces of tin. 📌Once secured, let your little one build the bunny and chicken by sticking on all the pieces. 📌Use their new craft as a pen, crayon or utensil holder. Did you find some fresh salmon at the store? What about a nice pasta with zucchini? Made it last night and totally enjoyed :-) I bought a big Salmon fillet and I used a small piece 150 gr. for the pasta and I will bake the remaining piece tonight. It's a lovely family recipe, great for little palates too! INGREDIENTS: 150gr fresh salmon, chopped in bite size cubes 3 medium zucchini, chopped in cubes 8 mushrooms, heads only, chopped 4 cloves garlic, peeled and sliced in half 1 tbsp parsley, minced 2 Tbsp black olives, pitted 2 Tbsp olive oil salt 1 lb.pasta of your choice PROCEDURE: cook the pasta following the directions on the packaging. Reserve 1 cup of the starchy boiling water. In a skillet add the garlic and oil, cook for 1 min. Add the zucchini and cook for 3 min. Add the mushrooms, parsley, adjust with a pinch of salt and cook for another 5 min. Turn the heat off and add the salmon. Mix delicately. The salmon will cook with the heat of the veggies. Add the olives. Drain the pasta and combine with the sauce. Apple, Carrot & Raisin Overnight Oats 🥕⁣⁣ ⁣⁣ Anyone else's toddler absolutely ravenous in the mornings?! Rosie loves her breakfast and this morning she had 2 bowls of these overnight oats. Plus a biscuit. I just don't understand where it all goes; she's like the hungry Caterpillar.⁣⁣ ⁣⁣ Anyway these were a real winner and a great way of creeping a bit of veg into an extra meal.⁣⁣ ⁣⁣ Ingredients:⁣⁣ 1/2 apple⁣⁣ 1 small carrot⁣⁣ 1 small handful raisins⁣⁣ 1/2 cup of oats⁣⁣ 1 tsp mixed spice or cinnamon⁣⁣ 1 tsp chia seeds⁣⁣ Cup of Natural yoghurt⁣⁣ Splash of milk⁣⁣ ⁣⁣ Method:⁣⁣ • Peel your apple and dice into small bitesize pieces, then place in a small lidded saucepan with just enough water to cover the bottom of the pan. Add your mixed spice or cinnamon and place on medium-low heat and stew for 10 mins.⁣⁣ • Meanwhile grate your carrot. Add to the pan after the 10 mins and stew for another 5. Drain and let cool.⁣⁣ • In a kilner jar (or similar) add 5tbsp yoghurt then your oats on top. Homemade pizzas for lunch 😋🍕 I love making these with my little, today she was dressed as Elsa & thought she created magic when pressing the button on our bread maker 💫, which also makes the best pizza dough! Making it by hand is also really easy but I just wanted to put the dough on this morning so I could get on with other things.
