These rolls are to die for. Voila! Dinner is served. Pork loin Chops were cooked in the Instant Pot. I’m still trying to perfect 👌🏽 cooking meat in it. I sautéd the chops with 1 tablespoon butter on the sauté setting in the pot on each side. Then I sprinkled some paprika and Johnnys seasoning to the chops. Added 1 cup of water. Set the instant pot to meat setting and cooked them for 20 min on medium pressure. They were delicious, BUT they could’ve been juicier at 10-15 minutes instead. Work in progress with the instant pot. So dinner was white rice (in the rice cooker), pork chops, and green beans with Parmesan cheese. Tasty dinner and SUPER simple to make. 🍱 DAILY MEAL HIGHLIGHT #eattherainbow Today was a very long and stressful day. I didn't expect to be out all day but it was 8pm before I got home. [And still with no car...] ~ I am reacting to any and everything I have tried eating out so I had to put a #justsayno plan into place and only eat at home. This was very difficult today... I brought a couple of pieces of fruit and some nuts with me but by 6pm I was truly hungry and just about said reaction be damned and ate out anyway.... ~ But what would that have done except made an already bad day worse. Adding a big flare up reaction to an already overstressed body is just a bad idea, so I waited until I got home and cooked dinner even though it was the last thing I felt like doing. • ground turkey veggie scramble • I really need to go to the grocery store so tonight's dinner was one of those "what is left in the fridge/freezer" meals. AR was unsure about the overall texture but there was a LOT of different textures going on in this dish, so I'd say she did just fine! Italian Meat(ball)loaf! Mashed Potatoes! Peas! This was a great way to combine two faves...meatballs and meatloaf! 1 pound ground beef 2 Italian sausages (remove the casing!) 1/3 jar of sliced mushrooms 1/4 yellow onion 1/4 cup Italian style breadcrumbs 1/4 parmesan cheese (I did half grated, half shredded) 1 egg 1 tsp Italian seasoning 1 jar spaghetti sauce (we really liked this one - The Silver Palate *chef's kiss) 3 potatoes 2 tbs butter 1/2 cup sour cream 1 can of peas Chop the mushrooms and onion. I wear gloves for this part - Mix together the beef, sausage, mushrooms, onion, breadcrumbs, cheese, egg, and Italian seasoning. Spray your loaf pan with cooking spray and then add your mixture and form into a loaf. Top with spaghetti sauce. Bake at 375F for 1 hour. Peel, wash, chunk, boil, and drain your potatoes. Mix with butter and sour cream and whip with a mixer. Heat up your peas! I doctored up this leftover bread we had, I scored the top and coated with spreadable butter. Sprinkled garlic powder and salt over the stop. Heated up in the 375F oven for 10 mins. It was great! I finally tried roasted radishes as a potato substitute and I was not disappointed! I can't believe I've never had this before. For the chicken, (which I got for free today on the Albertsons app), I just seasoned it with the Copycat KFC seasoning recipe. Baked at 425 for about 40-45 minutes. Cut potatoes into cubes, toss with olive oil, salt, pepper, garlic powder and basil. Roast for 40 mins at 375. Maple glaze - 1/4 cup maple syrup, 3/4 tsp cayenne, 3/4 tsp paprika, 3/4 tsp garlic powder, 1/2 tsp pepper, 3/4 tsp salt, 2tbsp olive oil. Spread glaze over pork chops and bake for 25 mins. This is our go to glaze for pork chops. So good. Stuffed eggplant 🍆 🧀😍😍 (vegetarian) Preheat oven to 400 Wash and cut an eggplant into 6-8 slices lengthways Spray a baking sheet with nonstick spray Lay the eggplant out & add avocado oil, salt & pepper Bake 10 min Flip Bake 10 min In a small bowl mix: Sour cream Goat cheese A small amount of whipped cream cheese Bread crumbs Lemon zest Fresh lemon juice Salt Black pepper When the eggplant is done baking take them out to cool until you can make them into rolls Once cooled, lay a piece of eggplant in front of you Add 1-2 tbs of cheese stuffing closest to you and roll it up away from you. Anyone struggling with Breaky ideas??🤷‍♀️⠀ ⠀ 🗣 actually we know people are because this was another Q from you guys😏 (you guys are fuelling our posts and we 💜 it so don’t stop!) ⠀ ⠀ Biggest things at breakfast to focus on.... 🥁 drum roll pleeeeeasse🥁.. protein and fiber (yes we will never shut up about fiber)⠀ ⠀ Here are some ideas:⠀ ⠀ 🥣 yogurt (plain Greek preferably😇) + all bran buds (helllaaaa fibrous🙏) + 1/2-1 cup fruit (berries are da bomb🍓) + something sweet if your 👅 desires (granola, drizzle of honey🍯)⠀ ⠀ 🥣 oatmeal + 🍌 fruit+ hemp hearts (protein + omega 3zzz) + your fave milk 🍶⠀ ⠀ —> can even do overnight oats so it’s a quick grab in the morning! 🤩 Lots of recipes online 💻⌨️⠀ ⠀ 🥚🥚couple of eggs + 1-2 slices whole grain toast 🍞 + piece of fruit 🍎 ⠀ ⠀ 🍳 omelette with ++ veggies in it! 🍅🥬🧅🥔) ⠀ ⠀ 🍞 whole grain toast + pb🥜 OR avo 🥑 + 1/2-1 cup cottage cheese⠀ ⠀ 🍞 whole grain toast + pb🥜 + 🍌 banana ⠀ ⠀ 🥤smoothie! - add: liquid (water/milk ~ less = thicker drink, more = thinner drink🤓), protein source (whey protein isolate), 1 cup of fruit, 1/2 cup veggie (spinach is pretty tasteless so there ya go), healthy fat (almonds/cashews/walnuts/nut butter/flaxseed/1/4 of an avo), ice if ya like it like thaaaatt🥶⠀ ⠀ 🥞 🧇 you really thought we were going to deprive you of pancakes & waffles? HELL NO. Here’s the thing, keep these guys in moderation (i.e don’t make it your everyday breaky, pick the above stuff more often), and when you have it, add berries/fruit for some extra fiber🍌🍓🍇🥭🍍 ... and when you have it, maybe even throw in some chia or flax🤷‍♀️.. oh, and when you have it, f***ing enjoy it 😘⠀ ⠀ On the go? Mung bean is a nutrient packed legume, rich in dietary fibre, folate and makes a fantastic plant based protein source. ⠀⠀ ⠀⠀ ⠀⠀ This mung bean dish is super simple, incredibly filling, nutrient packed and delicious 😋 If you are looking for dinner inspiration tonight 👇🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ WHAT YOU’LL NEED: 🌿200 grams of mung been fettuccine (I tend go for ‘ECO Organics’, found in most health food stores) 🌿1.5 cup of mushrooms ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀⠀🌿2 cups of rocket or spinach ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ For the cashew cream in a Nutri bullet or food processor blend: 🌿1.5 cups of activated cashews (otherwise soak natural cashews for at least 2 hours in water followed by draining and leave them to dry. 🌿2 garlic cloves 🌿1/2 cup of nutritional yeast 🌿1/3 of EVOO 🌿Salt and pepper to taste (Add more cashews if required to create more thicker consistency) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ METHOD: 1. Prepare Mung Bean fettuccine as per the instructions on the packet. Drain and set aside. 2. On a medium heat sauté mushrooms using extra virgin olive oil. Once golden brown stir through fettuccine followed by the cashew cream( add additional nutritional yeast for cheesier flavour) . 3. Reduce heat to low and add in rocket, stir through for 2 minutes. 4. Serve it up and enjoy! This head cold is running through our house! I'm finally feeling more like a human, so here's supper from the other night. Scroll ⬇️ for the recipe. It was SO good. Adding it to the rotation of frequently made meals. ————————————————————————RECIPE~Mediterranean Olive Chicken and Rice Bake - Chicken thighs - 1/2 cup brown rice - Artichokes - 1/2 Onion - Kalamata olives - 1.5 cups of chicken stock - Fresh parsley - Basil - Oregano - Marjoram - Salt and pepper - Lemon juice and zest - Garlic - Olive oil - Feta - Marinate chicken thighs in olive oil, lemon juice and zest (from one half of lemon, save other half), garlic, parsley, oregano, basil, marjoram and salt and pepper, for at least 1 hour. Brown chicken skin side down in olive oil. Once crispy and brown, set chicken aside. Using same pan brown onion and garlic. Chop up olives and artichokes and add to onion mixture. Once onions are soft, add rice and chicken stock and bring to a simmer. Pour into a baking dish and place chicken on top. Cover and cook for 30 minutes at 450 degrees. Uncover and cook for 15 more minutes or until liquid is gone and rice is cooked through.
