This week was tough. I’m not one to complain or be negative or even let external 💩 effect my mood but this week felt pretty defeating. So, I’m making a list of the things this week I’m grateful for. This is type1 diabetes. This is what a month worth of Leah’s insulin pump sets look like. This is how many times i have had to stick a needle into her skin to apply her set which delivers the insulin to keep her alive. What you can’t see in this picture is the 5/6 sensors I apply in the month and around 200 finger pricks I do a month to check her blood sugars. Leah has diabetes because her pancreas stopped producing insulin. Leah wasn’t born with diabetes and nothing could have prevented it happening. Type 1 diabetes is an auto immune condition. It’s not contagious and it’s not self inflicted. So when you meet someone who is a type 1 diabetic, you see a warrior in front of you. For all the ups and downs and finger pricks and needles they endure just to live and survive. Leah takes it all on her stride and is healthy and thriving. Baking and spending time in the kitchen has gotten me through A LOT. It’s such a great distraction to the crazy going on in the world, no matter what it my be at the time. I love finding new, more difficult things to challenge myself with in the kitchen. This is why I started making macarons about a year ago, to challenge myself and distract myself and we’re still going strong through quarantine 🙌 I feel like so many of us are starting to emotionally break down. We all know that fruits and vegetables are healthy foods, but what if you have diabetes?⁣ ⁣ Many people have been told to limit fruit 🍉 consumption for better glucose control… but does the research support this?⁣ ⁣ A 2017 randomized control trial in 19 individuals with Type 2 Diabetes 💊 (T2D) assessed blood glucose levels following a meal low in fiber or high in dietary fiber coming from either whole fruit (papaya and orange 🍊) or a powdered fiber supplement. There was an 18% decrease in blood glucose levels measured over 3 hours following both of the meals with high dietary fiber compared to the low fiber meal.⁣ ⁣ In this study, the improvements in glucose levels were accompanied by similar levels of insulin 💉⁣ ⁣ While this is not a direct measure of insulin sensitivity, this data suggests that the insulin present was more efficient at lowering blood glucose after consuming the same amount of carbohydrates (with the same glycemic index and load). This study overall suggests that consuming more fiber, despite the often-demonized “sugar” in fruit, may actually increase insulin sensitivity.⁣ ⁣ Additionally, in the most recent and largest meta-analysis we found to date, 11 out of 13 prospective studies found fruit was protective for T2D. Pooling the data from all 13 studies, high fruit consumption was associated with a 9% decrease in T2D risk. Four cohort studies specifically assessed only blueberry consumption and found a 25% decreased risk!⁣ ⁣ Even in healthy individuals, high fruit consumption was associated with lower fasting insulin (-2.35mU/l) levels despite similar fasting glucose levels.⁣ ⁣ 👇👇👇👇 CLICK LINK IN BIO 👈🤑🤑🤑 . . Things are starting to get physically uncomfortable as baby girl is getting bigger and running out of space. Does anyone else love their Insta-Pot? I never ceases to amaze me how how throwing a handful of ingredients in this thing can produce such mouth-watering and amazing results! Tonight... simple stew. - round roast, chopped in chunks - 2 1/2 cups broth - chopped carrots, potatoes, & a sweet potato - herbs: salt, oregano, basil, thyme - 1 Tbsp balsamic vinegar - cooked on the “stew” setting for 90 minutes - once done, mix arrowroot powder into some of the liquid to thicken 😋

Today I’m sharing with you all a little secret. [#ad] I had gestational diabetes with both my pregnancies. I was put on a very strict diet that would soon change my lifestyle forever. You see, once I had both my girls, the GD was gone, but I’ve been a borderline type 2 diabetic ever since. For this reason I choose to live a healthier lifestyle plus my great grandma passed away from diabetes and now my grandmother has it. Which brings me to a new statistic I recently read. . Did you know per the CDC, Hispanics are 2x more likely than non-Hispanics to develop type 2 diabetes? Further, it’s expected that 50% of U.S. Hispanics will develop type 2 diabetes over their lifetime. And in a recent @diabetes_freedom_  survey of over 500 Hispanic Millennials, the majority (87%) expressed interest in managing/preventing type 2 diabetes for themselves or their family through natural means such as diet and without medication if possible. Dancing isn't just good exercise! Scientific studies have shown that it can decrease anxiety, increase self-esteem, and improve psychological wellbeing. And, what's neat is those benefits are in addition to the mental health benefits of exercise. Scientists are still trying to understand the details, but two possible reasons for this are: 1) the active meditation benefits of expressive movement combined with music therapy; and 2) increased body awareness leading to self-trust underpinned by feelings of enjoyment and empowerment when dancing! We like to have one-song dance parties, usually to children's music, with the goal of being as goofy as possible. My kids always say that it's embarrassing and they don't want to do it. And then as soon as I'm dorkily dancing to Sandra Boynton's Tickle Time or Casper & The Live Platinum Band's Cha-Cha Slide, they can't help but join in. It doesn't take long before we're all huffing and puffing and laughing! There's also some awesome online dance parties and even dance tutorials/classes you can participate in from home! If you want to lose weight, should you eat breakfast or skip it? 🤷🏻‍♀️⠀ ⠀ Intermittent fasting is all the rage right now and it often means skipping breakfast. But is it worth it? 5 Steps to Beat the Quarantine-15 💪🏼⠀ ⠀ If you’re feeling stressed out about being home, where snacks lurk around everyone corner, listen up. Stick to these quarantine rules to manage your weight and stay healthy, even while staying home: ⠀ ⠀ 1. Go for a walk daily! Aim for at least 30 minutes outside in the fresh air and sunlight ☀️⠀ ⠀ 2. EGG BUN BREAKFAST SANDWICH Who doesn’t love a good breakfast sandwich? This is a delicious low-carb option that’s still loaded with goodies and flavor! I guess it’s kind of like a BLT, but replacing the lettuce with creamy mashed avocado 🥑 You’ll need egg molds for cooking the egg if you want it to be perfectly round and thick like a “bun”, but other than that it’s super simple! If you’re Paleo or whole 30, just make sure the bacon is compliant 🥓 Recipe makes 1 sandwich Ingredients: • ¼ avocado • Salt/pepper • Ghee or olive oil • 1 green onion, sliced • 2 eggs • 2 pieces bacon • 2 slices tomato Directions: 1. Mash the avocado and add salt and pepper to your preference. Set aside 2. Heat ghee or oil in a skillet over medium heat. Add the sliced green onion and sauté for about a minute 3. Using your spatula, position the green onions into 2 areas of the pan - each about the size of your egg mold 4. Place the lightly-greased egg molds in the pan with the green onions inside, then crack an egg into each mold 5. Sprinkle with salt/pepper. Cover and let egg cook to your liking, then loosen the edges 6. Soooo I gave up coffee for two weeks and these are the two most noticeable effects: . 1. I had more of an appetite and it was a bit harder for me to fast, this made me realize just how much coffee suppresses appetite symptoms. 🥓🍳 . . 2. Probably the most beneficial effect was not feeling anxious; after I stopped drinking coffee I never felt nervous in the morning anymore. 🤷🏼‍♀️ . . Ultimately, there are some positives to not drinking coffee, but after going 2 full weeks, I’ve come to realize I enjoy my morning java and coconut milk lattes WAY too much to give it up for good. ☕️☕️☕️ . .
