I love making pizzas at home! You can control the crust 🍕(gluten free, cauliflower, or tortilla?), the cheese 🧀(goat cheese, vegan cheese or no cheese?), sauce and the toppings! I made a artichoke, spinach, pesto and goat cheese pizza on brown rice tortilla — it was quick, delicious, and filled with veggies. A few days ago I shared how I took inventory of everything in my freezer and I’ve been trying to use it all up. I defrosted cod and made fish and chips with broccoli! This meal took just under an hour to complete and it was so satisfying! I loved making this because I was just using up ingredients I had on hand! FISH (makes 4 filets) • 1 egg whisked for coating • 1/2 cup of Almond Flour • 1/2 cup of coconut flour • 2 TBS of Arrowroot Powder • 1 TSP each of garlic powder, onion powder, real salt & black pepper —mixed this all together and used it as the coating. First I dipped the fish in the egg, then the flour mixture and placed on a parchment paper lined baking sheet and baked at 425 for 15 minutes EVERYTHING BUT THE BAGEL POTATOES • Wash and slice baby russet potatoes and place face up on a baking sheet. • Drizzle with avocado oil and sprinkle a GENEROUS amount of Everything but the Bagel seasoning • Roast at 425 until fork tender (about 20 minuite s) GARLIC & LEMON BROCCOLI • Heat a large pan and place just enough water to disburse evenly throughout the pan • Add broccoli florets making sure to cut and large florets and chop off any long stems. Sprinkle a tsp of real salt. • Cover with lid and steam for about 5 minutes (more of you like your broccoli a little more tender.) after about 5 minuite the water will have evaporated, be sure to check on broccoli and be sure they don’t burn! • Remove from pan and toss with the juice of 1 lemon and set aside. • Slice garlic and sauté for a few minuets in some avocado oil, remove from heat when garlic begins to brown. Toss oil and garlic with the broccoli. TARTER SAUCE • Mix a few TBS of avocado oil mayonnaise with a splash of apple cider vinegar and some finely chopped pickle slices. I’m loving Claussen pickles, especially the round cut for burgers! Mix in a splash of hot sauce and a pinch of salt for some extra taste. Everyone loves a little sugar and spice 😉⁣ ⁣ Snickerdoodles ⁣ ⁣ -1/4 cup coconut oil (melted)⁣ -1/4 cup coconut sugar ⁣ -1 egg (can be made vegan with applesauce) ⁣ -1 teaspoon vanilla extract ⁣ -1 1/2 cups almond flour ⁣ -2 tablespoons coconut flour ⁣ -1/2 teaspoon cinnamon ⁣ -1/4 teaspoon baking soda ⁣ -1/4 teaspoon lemon juice ⁣ -1/8 teaspoon salt ⁣ ⁣ For topping: ⁣ -2 tablespoons cane sugar ⁣ -1 1/2 teaspoons cinnamon ⁣ ⁣ 1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.⁣ 2. Mix together coconut oil, sugar, egg, and vanilla until combined. ⁣ 3. Add in almond flour, coconut flour, cinnamon, baking soda, lemon juice, and salt. Combine. Let dough sit for 5 minutes.⁣ 4. In a separate bowl, mix together cane sugar and cinnamon. ⁣ 5. Roll dough into tablespoon sized balls and roll each ball in the cinnamon/sugar mixture. ⁣ 6. Put each ball on baking sheet and flatten with palm of your hand. ⁣ 7. Bake for 9 minutes. ⁣ 8. Let cookies cool for at least 10 minutes. ⁣ 9. Enjoy! ⁣

Can I develop food intolerances on an elimination diet? . . After following an elimination diet, sometimes patients will notice certain foods that didn't seem to cause too many problems are now generating significant symptoms upon reintroduction. . What's going on here? Did they develop an intolerance to the food by not eating it? . While I can understand the thought process, this is probably not the case. Instead, that food sensitivity was there the whole time, but we weren't aware of it because the immune response had fatigued. . The way I explain it is to think of your body like a castle. You only have so many troops to defend your castle and if they're constantly under attack, then you're going to lose numbers. Eventually, your ability to mount a proper defense with the right amount of vigor and intensity will be compromised. . The same sort of thing can occur with your immune system if it is constantly being exposed to a food protein that doesn't agree with it. . When we eliminate the food, it gives our body a chance to recoup and build up the troop numbers once again. . While some people might suggest that they should continually eat the food in question to minimize large responses, this will generate low grade inflammatory problems that could cause issues for our immune system and overall health long term. My work from home setup from today! Colorado might be pulling an April Fool’s joke with this gorgeous weather today since it is supposed to snow tomorrow, but I am here for it! So yup - I put on my swimsuit and sunhat and headed into my backyard to soak up a little vitamin d with my favorite co-worker. Finding happiness and joy during a worldwide pandemic seems impossible for me some days, but today was a very good day! Looking forward to more sunshine (after this snow storm) and to hopefully get my garden up and running for the summer!

Golden Curry 🔥 I know this looks a lil unassuming BUT Ed literally said it was better than curries we had in Thailand - i kid you not. INGREDIENTS: 2-3 garlic cloves 1 tablespoon ginger 1/2 cup onions Avocado Oil 2 carrots 1 sweet potato handful of mushrooms 1.5 cans of coconut milk @prettythai Green Curry Powder 1.5 tsp of Curcuma Golden Paste DIRECTIONS: Saute garlic, onion + ginger Add all veggies except kale Add 1 tablespoon @prettythaibrand Green Curry Powder - the more you add, the spicier the curry will be Cook for ~5 min Add Curcuma Golden Paste, stir in Add coconut milk and simmer until veggies are cooked through *note - you can add any curry powder/paste that you have! Hi friends! Given the current state of the world right now, my anxiety has been running wild (I’m sure I’m not alone in that). I’ve been trying to stay informed but not let it consume me, stay busy but allow myself time to relax and take care of my mental health. I haven’t cooked in quite some time (since my mom is cooking up a storm over here) and that’s something that always brings me a sense of joy and calm. ✨ So, today I had the idea of doing a 30 for 30 baking challenge. I’m gonna test out 30 bagel recipes for the 30 days of April! Most of them will likely be yeast free or paleo, but it’s gonna be 30 days of this, so I’m sure I’ll try some good old fashioned gluten & yeast filled ones along the way! I’ll be posting them here each day with a mini review. 🥯 Today’s bagels were a paleo/yeast free recipe I found on Pinterest. They were super easy to make. You’ll likely have most of the ingredients in your pantry already so making them during quarantine would be super easy! 🙌🏻 The flavor came out great but I will say they were slightly doughy on the inside still so I had to toast them as soon as I cut into them. I think if I had left them in to bake another 10 min before I put the egg wash and #everythingbutthebagelseasoning on them they would have been fantastic! I’m giving them a 5/5. They’re definitely tasty, but likely won’t satisfy a REAL bagel craving cause of the texture difference. #aprilsbagels #paleo #bagels

Lentil stew😋 “Mom, can I have some chili?” My response, “Sure!” Not expecting her to like it but excited she wants to try. She takes a few-bites and exclaims, “this is the best chili you’ve ever made Mom!” I giggled to myself because it’s made with lentils, and she won’t eat them🤣😝High five Mom🙌🤗 When I was vegan I ate a lot of lentils - green, black, yellow, red, brown. I made salads, soups, stews, burgers and snacks with lentils. My tummy tolerated them well. Then I decided to stop eating them because of the lectin theory. Lectins are tied directly to inflammation and autoimmune reactions in your body. They bind to the sugar molecules called polysaccharides that cover the surface of most cells in your body. I’ll stop there. Because right now, the “rules” are all changing. Besides, there’s always been conflicting information when it comes to nutrition. On a macro level, Vegan vs Paleo is case and point. I say, tune in and listen to your body, it knows best! These days I’m tuning in and trusting my gut more than ever.....I’m trusting what is on so many levels. One Pot Green Chicken Curry! ✨ INGREDIENTS 3 Chicken Breasts Cut into 1” Slices 2 Tablespoons AVO 13.5oz Full-Far Coconut Milk 4oz Green Curry Paste 1 Red Pepper Sliced 1 Cup Red Onion Sliced 1 Tablespoon Minced Garlic .5 Teaspoon Salt 1.5 Tablespoons Mined Ginger Handful of Cilantro Chopped ✨ ASSEMBLY 1. In a Dutch oven over medium heat add AVO, onion, garlic and chicken. Heat all sides of the chicken. 2. In a medium bowl whisk coconut milk until smooth. Add green curry, red peppers and salt. 3. Mix all ingredients well and add to Dutch oven. 4. Keep on medium heat for 5 minutes. 5. Bake at 375 for 45 minutes. I put my frozen salmon into the Instant Pot with about a cup of water and the juice of one lemon, topped it with the garlic powder, salt, lemon slices and parsley, and pressure cooked it on high for 5 minutes. The salmon was perfectly flaky, but I think I could have seasoned it better. ALMOND BUTTER CHOCO CHIP COOKIES.//🌜🤍 1 cup almond butter (or any other nut butter) 1 cup of coconut sugar
1 egg* (or flax egg)
1/2 @giddyyoyo Dark chocolate bar diced up (or @lilys_sweets choco chips) (1 scoop collagen, optional @vitalproteins) 1.Preheat oven to 350°F. 2.In a medium bowl, mix the almond butter, coconut palm sugar, and egg*. Use a rubber spatula to scrape ingredients off the sides of the bowl.
3.Add in chocolate chips, and stir again until evenly distributed. 4.Scoop a rounded tbsp size of dough and roll in the palms of your hands into a smooth ball. 5.Cover your baking sheet with ~12 balls. Press a fork firmly into the dough, first in one direction, and then the opposite direction (or if you forget like me, just one direction haha)
6.If the dough crumbles a bit, just patch it back together by adding it on the top of your cookie. 7.Bake until the cookies brown slightly, about 10 mins. 8.Remove from oven and cool for 10mins. 9.If they last this long, then store in an airtight container. #yum

Our creamy, dairy-free roasted red pepper pasta is a great weeknight dinner! It's Paleo, Whole30 + Keto friendly and comes together in just 30 minutes! Have you tried it yet?⁣ ⁣ INGREDIENTS⁣ FOR THE STEAK:⁣ 1.5 lbs flank steak, cut into bite-sized strips against the grain (or sub skirt steak)⁣ 2 tbsp ghee⁣ Salt and pepper⁣ ⁣ FOR THE SAUCE:⁣ 1 cup water⁣ 1 jar roasted red peppers, drained (12 oz jar)⁣ 1 lemon, juice of⁣ 2 cups raw whole cashews⁣ 2 tbsp nutritional yeast⁣ 1 tsp garlic powder⁣ 1 tsp ground black pepper⁣ 1/2 tsp sea salt⁣ ⁣ FOR THE REST:⁣ 3 baby zucchini, spiralized into noodles (trim noodles into shorter strands if desired)⁣ Parsley, chopped (optional garnish)⁣ ⁣ INSTRUCTIONS⁣ 1- Make the sauce by placing all of the sauce ingredients in a high powered blender. Blend until smooth and creamy. Set aside.⁣ 2- Cut steak into strips as noted. Turn zucchini into noodles and chop parsley (optional). Gather remaining ingredients to have them ready.⁣ 3- Heat a large skillet over medium heat and add ghee. Once hot, add steak strips and season lightly with salt and pepper. Cook for 1-2 minutes on each side, until browned and cooked to your liking. Remove and place on a plate.⁣ 4- In the same pan, turn heat to low and add in the sauce. Stir continuously for 2-3 minutes to heat it up.⁣ 5- Add the zoodles and steak into the pan with the sauce. Mix and toss to coat with the sauce. This week was my son’s 4th birthday. Life goes on, even during a pandemic. It’s a wonderful gift to be able to be able to do such a simple thing during such a difficult time. Even if it’s not your birthday, I say make the cake and find celebrate something. Here’s my adapted AIP Chocolate Cake recipe. The full recipe is over at bonaippetit.com.⁠ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠ To Make the Cake⁠ 👉3 Bananas⁠ 👉1 cup Apple Sauce⁠ 👉1 cup Pumpkin Puree⁠ 👉1/4 cup Coconut Oil melted⁠ 👉1/2 cup Carob Powder⁠ 👉1 cup Cassava Flour⁠ 👉1 teaspoon Baking Soda⁠ 👉1/2 teaspoon Salt⁠ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⁠ To Make the Frosting⁠ 👉1/2 cup Palm Oil Shortening⁠ 👉1/2 cup Coconut Cream⁠ 👉1/2 cup Carob Powder⁠ 👉1/4 cup Arrowroot Flour⁠ 👉1/4 cup Honey⁠ 👉1/2 teaspoon Vanilla Powder⁠ 👉1/8 teaspoon Salt⁠ ⁠ To start making the cake, preheat oven to 350 degrees.⁠ In the large bowl, combine all ingredients then combine. ⁠ Pour batter into square casserole dish and then bake for 30 minutes. SUPER CHEWY PALEO CHOCOLATE CHIP COOKIES⁣ ⁣ Can we just bask in that chocolate closeup for a second though 😍🤤⁣ ⁣ ⁣ #recipe:⁣ 1 cup of almond flour⁣ 1/4 cup coconut flour⁣ 1 tsp baking powder⁣ 1 egg⁣ 1/4 cup of coconut oil⁣ 1/4 cup of coconut sugar ⁣ 1 tsp vanilla⁣ (all the chocolate chips you want!) ⁣ ⁣ Directions:⁣ ⁣ 1. Preheat oven to 350F⁣ 2. In a medium bowl add your egg, vanilla, coconut oil, and sugar. Mix together.⁣ 3. Add flour and baking powder to your measuring cup. Pour into your bowl and combine⁣ 4. Fold in your chocolate morsels⁣ 5. Roll into balls and place them on a parchment-lined baking sheet. Gently flatten to the thickness you like. 6. Bake for 10-12 minutes

#coronacooking chronicles continues with a “chopped” like moment where i opened my fridge and had to get creative with what i had. luckily with my @nytcooking app in hand, i was able to find an idea for this whole cauliflower i had left. “Whole Roasted Cauliflower With Almond-Herb Sauce” by @juliamoskin caught my eye because i love a nut and herb sauce, especially since i had nuts and bought TOO many herbs. the only difference is that i sliced my cauliflower up into “steaks” and i made it more of a meal by cooking up some crumbled italian sausage with a diced jalapeño and several chopped scallions. i drizzled the meat and the herb sauce on top and it was pretty pretty (said like larry david) delicious. recipe details below. . . . . Nothing like a little baking to perk up your mood. These have been on my “want to make list” for forever! And since I purchased a donut/bagel pan during some early on anxiety shopping, I was finally good to go! Paleo Everything Bagel recipe by @rachlmansfield and they’re super easy to make. I used @epicbar bone broth for the recipe and even added some egg white protein to make them extra filling. 🍳 I plan on getting some smoked salmon later this week and making a lox situation out of it. What else should I top these babies with? What’s your ideal Everything Bagel topping?

taco time baby! ⁣ ⁣ ⁣ i love a quick wrap for lunch. with salad of course because i’m addicted to veggies. this wrap is sooo easy but srsly tasty. ⁣ ⁣ i made my own hummus and it was 🔥. ⁣ ⁣ green hummus (inspired by @mawarriors) :⁣ 1 c spinach ⁣ 1 can chickpeas⁣ cumin⁣ lemon⁣ salt⁣ 1 tbsp tahini⁣ ⁣ BLEND. i also added garlic but it was raw and now it kinda makes me nauseous so i don’t recommend that if you have a sensitive tum.⁣ ⁣ add the hummus to a @foodforlifebaking brown rice wrap, add crispy tempeh, avocado, sauerkraut, and veggies. roll it up and devour! ⁣
