FISH TACOS 🐠🌮💃🏼 will be a new staple in this restaurant! Anyone else feel like they’re running a 👩🏼‍🍳restaurant?! 🤣 There are a few diff parts of this recipe, but all come together to make one amazing dinner - fun way to switch it up from our regular meals. This was also Nick’s “favorite meal in quarantine” if this says anything! Here we go: TACOS 🌮:: (2) 4-6 oz pieces wild mahi mahi 1/2-1 cup @primalkitchenfoods thousand island dressing (to marinate for about 15 mins) Butter lettuce for shells *Sear on medium heat w/ avo oil for about 3-4 mins each side COLESLAW: 1 package coleslaw mix 2 bell peppers, sliced 1/2 c avocado🥑 mayo 2 tbsp ACV 1 tbsp monk fruit (used @lakanto ) *Mix salad & peppers all together well then add dressing. PICKLED RED 🧅ONIONS: 1/2 red onion, sliced 1 tbsp monk fruit *cover with 1/2 c red wine vinegar & 1/2 c water (cover until onions are 100% immersed *cover and allow to marinate for ~1 hour SPICY AIOLI: 1/4 c avocado mayo 3-4 tsp hot sauce Wrap tacos in butter lettuce 🥬 and serve with avocado, pickled red onions & whatever other toppings you like!! We paired with some @siete chips and cashew quest & it was bomb 💣🤤💃🏼 What’s on your menu tonight?! #PurelyPope 💖

R e c i p e a t t h e e n d When people talk about superfoods most think about hemp seeds, acai, kale, nuts ect. While all these foods are great- the true superfoods are organ meats! They are packed with nutrients & are usually much cheaper than your regular steak (probably because not as popular as steak 😑) Furthermore, offal has been highly valued in Traditional Chinese Medicine for more than 3,000 years. In fact, it is believed that consuming organ meats from animals will support the same organ in your own body. Organ meats, such as the liver, brain, kidneys and heart, were often part of traditional diets. Beef heart is a rich source of coenzyme Q10, known as CoQ10. According to the University of Maryland Medical Center, CoQ10 boosts your energy level, is vital for your immune system and works as an antioxidant -- fighting free radicals that damage DNA. CoQ10 may also prevent blood clot formation & lower blood pressure. So here is my husbands recipe that took less then 20 min of preparation and 1.5 hrs of cooking We used a pressure cooker so you may have to adjust cooking time if you don't have a pressure cooker Ingredients : 500 gr tomato passata, 1 whole grassfinished beef heart, 4 onions, 1 tbsp garam masala spice, 2 tbsp italian herbs, 1 tsp salt 1. Chop up heart in mouth sized pieces. The fat, the tendons, don't waste anything. 2. Chop onions and mix through the tomato paste with spices and heart. 3. Cook. No extra fat needed, the fat from the heart will get rendered. When everything is cooked it will sit on top, just mix it into the sauce. 4. Eat. Easy. Dinner is served 🍽 Mushroom burger blended with 100% grass-fed beef from @applegate (as recommend to me by my aunt) I added avocado and an egg on top and left it on a bed of dark greens 🥬 I roasted some carrots with avocado oil and put lots of @primalkitchenfoods mustard on top. Did you know mustard seed powder is a great source of trace minerals like magnesium and zinc? Yay for an easy meal that takes less than 15 minutes (besides the time to roast the carrots) to make! 😄

Feeling extra thankful for 2 things right now: Primal Kitchen sauces and my Instant Pot. I made the most tender bbq chicken in 30 minutes and I can honestly say I’ll never make it any other way now. . . Place chicken breast in pot and add: -1/2 cup chicken broth -2 tbsps Apple cider vinegar -salt, pepper, garlic powder to taste -1 cup @primalkitchenfoods bbq sauce (this Hawaiian flavor is 🔥) . Lock the instant pot and make sure your steamer valve is closed. Hit the “steam” button for 30 mins then quick release once it’s done. Shred chicken - it literally falls apart because of the tenderness 🙌🏼 . . Almond Coconut Pecan Crusted Salmon Tacos As promised this weeks recipe is a second installment to my what to do with left over salmon series. Sunday night I egg battered a big filet and dusted it in a new paleo flour (see pic) I bought at Whole Foods. Served it with homemade sweet potato fries, a spinach salad and chipotle lime mayo. The mayo was for the fries but the real winning flavor was the fish dipped in it, which gave me the idea for this dish. What you’ll need: Left over gluten free breaded salmon Gluten free tortillas (see the great almond flour ones I used in pic below) Organic red cabbage 1/2 small avocado per two tacos Chipotle mayo (you can blend regular with chipotle peppers to make your own or there’s some delicious store bought options now, I used Primal Kitchens) Fresh cilantro Lime juice Fresh organic raw veggies for side salad Olive oil, honey and apple cider vinegar for dressing This is so easy and quick y’all. Chop your salmon into smaller bite size pieces and throw in large skillet to warm up on low heat while chopping up taco and salad ingredients. Add tortillas to skillet for just a min or so to heat up. Wisk lime juice and chipotle mayo. Then top your tacos with cabbage, avocado, cilantro and lime mayo. Serve with simple side salad of your choice. Enjoy! Eat your veggies!!! Self-care is so important especially now, and eating veggies and healthy food is a huge part of that 💕 it might be super difficult to get pasta or rice, but these ingredients were in full stock at my local shops (I know that’s not the case for everyone, depending on where you live, so just do the best with what you have)! - This bowl: crispy salmon chunks with kale, broccoli, @primalkitchenfoods green goddess dressing (could use any dressing), and avocado. I cook the salmon in olive oil while I steam the broccoli in the microwave, then remove salmon and chop up, while I use the same pan to sauté the kale and broccoli with a sprinkle of salt. Add salmon back to pan, toss, add to bowl, dress, and add avo. Dinner in 10 min max 👌🏻

This meal was a childhood FAVORITE & @rachlmansfield made it sooo yummy!! (From her cookbook Just The Good Stuff!!) • • Hope everyone had a good weekend of relaxation & an even better start to the week. After 2 weeks of getting this online school rhythm, I have finally found a little routine and it, and honestly I’m still really enjoying it!! I have decided to set app limits due to the high screen exposure I no longer have control of, and that has been very beneficial to me both with eyes/headaches and productivity!! For those who have debated it, I highly recommend!! I limit Instagram to an hour and a half today and try to go under 2 hours total for all social media, 30 mins on YouTube, and then I have downtime from 10pm-9:15 am where it shuts all except essential apps down. By doing this, I have been reading before bed and when I wake up, as well as journaling, and I enjoy it much much better. So much more relaxing!! Anyway, have a great week and remember to see the good!!💓

Having one of our favorite meals tonight- air fryer wings and fries! We hand cut the potatoes into wedges, tossed with olive oil and @paleopowder pink powder. We baked them in the oven at 400 for 30 mins, flipping half way through. For the wings, we used the air fryer. Salt, pepper and a little avocado spray. Air fry at 390 for 25 mins, shaking every 5 mins. Then add the sauce to the wings and add back into the air fryer for another 2 mins or so. Go-to healthy smoothie recipe: Chocolate, Peanut Butter, Banana, and FIBER. When I have this for breakfast I am literally stuffed (like actually stuffed not the pretend I’m full bs) until lunch. Here’s how I did mine today: * Use this as a guide and modify as needed 1/2 cup - 1 cup of frozen riced cauliflower 1 cup of vanilla almond milk 1/2 of a banana Healthy scoop of peanut butter 1-2 handfuls of spinach 1 scoop of protein powder 1 scoop of collagen powder My favorite thing about cooking is there is no set way you HAVE to do something. If you don’t have an ingredient, sub it out, try something new, because you never know what new recipe you’ll create! All of the items above can be swapped to fit your taste buds. My beautiful no makeup, sweaty hair quarantined face 😂 I just finished a workout with @bala and @betsyblumenfeld and WOAH, by far the best workout I’ve had at home thus far. It was a HIIT style pilates workout and it really got all the body parts burning. 🔥 These workouts have been a highlight of my days. Shoutout to all of these amazing companies putting them on for us! I’ve also been loving my rice cakes. They’ve been the savior snack during this whole experience. Today I topped them with some simple egg salad I made yesterday for a protein-packed lunch. Here’s the recipe: - 10 hard boiled eggs - 3 spoonfuls of @primalkitchenfoods mayo - half a red pepper - red chili flakes Mash all the ingredients together and store in the fridge for an easy healthy snack or meal. PULLED PORK (you could do this with chicken too!) 😉 • • • • These types of foods are usually high in hidden sugars and loaded with salt. For a healthier version, I adapted a little but mostly used this great recipe from @thecleaneatingcouple & it was 🤤🤤. Friendly reminder that the meat should not be the ⭐️ of your plate. Make the veggies most of your plate for tons of inflammation-fighting antioxidants and fiber 😉 I bulked this up with lots of sautéed purple kale and steamed broccoli (added olive oil, salt, red pepper and garlic flakes). And then a few slices of roasted purple potatoes 🙌 Mix together: 1/4c EVOO + tbsp paprika + 1.5 tbsp garlic + sprinkle of black pepper, cinnamon and ground ginger + 1c @pacificfoods chicken broth. Add these to meat in crockpot (I used pork shoulder). Cover meat with layer of @primalkitchenfoods BBQ sauce & little @newprimal Hot and Spicy Marinade. Really great, clean sauces 👌 Cook on low for 8-10 hours. Pull apart, leaving the sauce with it & adding some more of the BBQ and H&S sauce!

Death/transformation is part of life. Part of this cycle involves carnivores and omnivores eating meat. This is a necessary part to retain balance. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ People often think meat eaters kill the most, but this is misplaced. All life kills in order to survive, whether plants or animals are eaten, life is taken in order to sustain life. It is neither good or bad it’s simply a law of nature.
