Gut friendly Oven baked Pizza from last Friday night. Approved👍 and photographed by my Italian family in Canada.🙏 @aaconsoli. I divided my usual sourdough bread dough (70% hydration made by 500 gr flour) into two and proofed overnight in fridge. Spread the dough into two 12 inch round oventray. Rest 3h at room temp. With olive oiled fingers made dimples on the dough to get the air and layered the toppings. Baked 15 m in very hot oven. 🌰Went to bhaji gully yesterday and I'm happy to report onions are now Rs 60 per kilo, still high but not ridiculous.🌰. . 🥗We were on mission matar, and bought 4 kilos of nasik peas which we duly peel and freeze and Eat throughout the year. My favourite crunchy nubs of winter are however the red radishes. Eating these tart, tiny radishes daily in salad and can't get over them. Weekend recap: Brisk walk/jog with our dog through snow drifts, breathing in the Arctic💨air🥶 (7°F) followed by these warm carrot and ginger biscuits with Yuzu marmalade. . . Putting sweet use to some leftover local carrots. Grated carrots lend a bit of sweetness to the dough and candied ginger give these flakey biscuits a sweet and zingy bite.🤤 For good measure and to start the day with a balanced breakfast, I often have a cup of oatmeal with a drizzle of date syrup and a sprinkle of pumpkin seeds and lots of water along with my coffee.🤷🏻‍♀️ #hydration . . Yesterday was well spent extracting honey and picking berries at Wally's Very Berry Orchard, Barwon Downs. All who visit our restaurant enjoy Wally's honey on Simon's menu, and during the Summer months his berries. Everything Sourdough This dough was a 78% hydration but an hour after the toasted wheat germ and seed mix (about 25% combined dough weight) it felt more like a 60-65% hydration. Pretty crazy! Wasn't expecting the seeds to pick up that much water. It resulted in a very flavorful yet semi dense, however, I would of loved the crumb to be a bit softer for this bread. Doce de amendoim🥜 Ingredientes: - 1 xícara de amendoim torrado sem casca e sem sal - 1 xícara de passas hidratadas Preparo: Bater tudo no processador, até dar liga. DAY 2 of the #lowwastechallenge _ Use what you have! We often forget how much money we already have tied up in stuff inside our kitchen cupboards. _ A lot of the time when we start something new we want a clean slate and in this case that can mean throwing out all the unwanted plastic lurking in the home. _ Please don’t do that. If you have plastic wrap and baggies that’s ok, for this 30 Day Low Waste Kitchen challenge you can put them away or find other ways to use them. Plastic baggies can be used to store odds and ends (not food) like nails, kids crayons, paint brushes etc. I have a few plastic baggies in the garage that I use for these types of items. You can use plastic baggies to create a DIY cold compress. Just fill it with water and put it in the freezer. _ If you have glass jars in your fridge or pantry wash them out and reuse them! They are great for bulk shopping and food storage. I’m sure you have lots of reusable bags lying around as well, we all do. _ Remember new items, even if they are eco friendly have an environmental impact. Glass jars are recyclable but they have a pretty big carbon footprint when manufactured. Glass is made from sand and uses a great deal of water in the manufacturing process, so use it before you loose it. If you don’t have enough jars, you can get them second hand or look at trade apps like Bunz or Facebook’s Market Place. - What do you reuse at home? Do you have any tips you can share?

One of our favorites for #ArkofTasteTuesday — the Meyer Lemon of California's Central Coast. These were hand-picked last month from a home garden in Laguna Hills, CA. It's the sweetest lemon we know... but is it even a lemon? Read on, curious folk...⁠ ⁠ Meyer lemon trees flower intermittently throughout the year, but the main season of fruit production is the spring. The tree is moderately vigorous and more cold hardy than most other citrus. It reaches only 6 to 8 feet high at maturity and is an attractive garden tree. The fruit is medium-sized, rounder than Eureka or Lisbon lemons, of a beautiful golden yellow, with a shiny, smooth skin and small pores. The rind is thin, and the fruit very juicy. The flavor is less acidic than that of true lemons, with a depth and complexity reminiscent of mandarins. It is a favorite ingredient with pastry chefs, and also produces a terrific marmalade. The Meyer lemon is not a true lemon, but is generally believed to be of a lemon x orange cross or a lemon x mandarin cross. Frank Meyer, a plant explorer with the U.S. Department of Agriculture, brought the tree to the United States from Beijing, China, in 1908. Este delicioso 😋 #ceviche da foto foi feito pelo pessoal do @tipiti.espaco com #peixe 🐟 parati (confundido com tainhota) que é pouco valorizado na nossa região da Grande #Florianpolis (e com boa valorização no nordeste), possui preço acessível e com alto valor nutritivo (contém #protenas, #zinco e #b12). . Compartilho a receita que é super simples e você pode fazer em casa! . . Ingredientes: • 1/2 kg de peixe parati • 4 a 5 limões • 1 cebola roxa pequena em cubos ou fatias finas • 1 pimenta dedo de moça picada • salsinha ou cebolinha a gosto • azeite e sal . Corte o peixe em cubos pequenos e coloque numa tigela. Coloque a cebola 🧅, a pimenta 🌶 e a cebolinha ou salsinha. Tempere com sal e um fio de azeite. Esprema os limões 🍋 na tigela. Misture e sirva. Pode ser servido com chips de batata doce 🍠 . . Ingredientes: • 1 batata doce grande • sal e pimenta-do-reino a gosto • azeite . . Corte a batata em fatias bem fininhas. Numa tigela, coloque as batatas, sal e pimenta. Coloque um pouco de azeite e misture. Unte com azeite uma assadeira e disponha as fatias de batata-doce, deixando um espaço entre elas. M E D I A T A S T I N G @tiongbahrubakery has a new spin-off concept in town - quite literally as you can only find #tiongbahrubakerydiner at @FunanSg and @RafflesCitySg malls. For now anyway. The menu is by Chef de Cuisine @paulalbert, a young French bistronomy chef who radiates a bright-eyed energy. Having spent time at a few of France’s top Michelin star restaurants and an apprenticeship at The Slow Bakery in Rio, Brazil, he has not only grown passionate about the art of fermentation but also amassed knowledge for it. Hence, the technique is showcased pretty heavily in his food which is more exuberant in flavour than what one would expect of such healthy and wholesome looking and sounding dishes. Here is everything we got to try: 1. Chayote Kimchi & Mung Bean Salad (VV) $18 - For a salad, it’s punchy! I was taken aback by how tasty the combination of homemade chayote kimchi, mung bean, crispy buckwheat, green parsley oil, watercress, pea shoots and roasted peanuts could be. Second helpings? Yes please. 2. Hot Chicken Salad & Caramelised Pumpkin $20 - The slow-cooked chicken breast with kabocha pumpkin confit and herb pomelo salad with wasabi dressing also got my vote. Love what the brown butter brought to the overall especially. 3. Super Green Warm Soup (V) $16 - We had a tasting portion but it was enough to get what it means to drink your greens. Chinese spinach, bok choy, Shanghai green, chye sim and lady’s finger were blended into a thick liquid and served with beetroot pickled ricotta, roasted candlenuts, sautéed shimeiji and green herb oil. I appreciated this for daring to be different and thought it was actually quite slurp-able. 4. Miso Whole-wheat Spaghetti with Broccolini (V) $19 - The pasta has the company of made-from-scratch basil and almond pesto, miso eggplant confit and grated grana padano cheese which gives it a hearty taste.
