Who else has a favorite restaurant dish? I love the pan roasted salmon from the restaurant down the street from me, but I don’t love the damage it does to my bank account. So I figured, why not try to make it home? Now I have a happy stomach AND a happy wallet, because as it turns out, this dish rings in at under $10 per serving. 😃😃😃
This recipe is actually so simple, I can’t believe I didn’t try to make it myself sooner. And it’s insanely nutrient-dense, so you can be sure you’re giving your body what it needs. The lentils take around 30 minutes, but you can do everything else while they simmer. The other main component is an easy 5-ingredient tomato vinaigrette — shallot, cherry tomatoes, olive oil, red wine vinegar, and fresh basil. Throw that in a saucepan for ~10 minutes, pan fry the salmon while you wait, and the dish is done!💯💯💯 .
